Guacamole
A classic, fresh-tasting guacamole made with ripe avocados, tomato, lime, coriander and chilli. Ready in 10 minutes and naturally vegan.

Ingredients
- 1 large ripe tomato
- 3 avocados, very ripe but not bruised
- juice of 1 large lime
- handful of coriander (leaves and stalks chopped, plus a few leaves roughly chopped to serve)
- 1 small red onion, finely chopped
- 1 chilli (red or green), deseeded and finely chopped
- tortilla chips, to serve
Method
- Use a large knife to pulverise the tomato1 large ripe tomato to a pulp on a board, then tip into a bowl.
- Halve and stone the avocados3 avocados, very ripe but not bruised (saving one stone) and use a spoon to scoop the flesh into the bowl with the tomato1 large ripe tomato.
- Add the limejuice of 1 large lime juice, corianderhandful of coriander (leaves and stalks chopped, plus a few leaves roughly chopped to serve), red onion1 small red onion, finely chopped and chilli1 chilli (red or green), deseeded and finely chopped, then season with salt and pepper.
- Use a whisk to roughly mash everything together. If not serving straight away, sit a stone in the guacamole to help prevent browning, cover with cling film and chill until needed.
☘ Tip
Pressing a saved avocado stone into the surface really does slow browning. The less air contact, the better.
